Caramelised Honey Almond Slice
School holiday time means you should probably top up your cake tins for the hordes of children. Here’s a slice for you to try:
Ingredients
120gm brown sugar
90gm unsalted butter melted
1cup(150gm) plain flour
1/2cup (70gm) almond meal
Almond Topping
125gm unsalted butter
95gm runny honey
11/2cup (200gm) slivered almonds. (I used some flaked almonds to make up the weight)
Method
Preheat oven 170Љ. Grease and line a 19 x 30 slice pan. If you don’t have one, go for a smaller size as this is a thin slice.
Combine melted butter, flour, sugar and almond meal in a large bowl; mix well. If the mix appears too floury add more butter.
Spread evenly over base. Bake 12-15 minutes until lightly golden. Remove from oven and rest on a wire rack.
Topping
Place butter and honey in a small saucepan over medium heat. Simmer, stirring occasionally, 3-4 minutes until mixture is lightly caramelised then stir in nuts.
Pour evenly over the base. Bake a further 12-15 minutes until golden.
Remove from oven and cool in tin until completely cool. Cut into slices about sixteen pieces.
