Date and Apple Squares

Here’s a date and apple slice that you can almost convince yourself is good for you. So much fruit and rolled oats - you can almost feel it doing you good.

Date and Apple Squares

Ingredients  

225gm unsalted butter

140gm apple, peeled cored and chopped 

140gm stoned dates. (I used dried dates)

280 gm brown sugar

175gm plain flour

1 tspn bicarbonate soda

100gm rolled oats

Method

Preheat oven to 170º. Grease and line a 18cm square pan. Tip apples into a pan with 2 tblspn water. Bring to boil, simmer until apples are soft. 

Add dates and 50gm of sugar, cook a further five minutes.Take off heat and mash apples into mixture until smooth.

Melt butter, mix the dry ingredients together in a large bowl pour over the butter. Stir to combine and oats are covered.

Press half the mixture firmly into lined pan, spread apple/date mixture evenly over the top. Cover with remaining oat mixture press down. Bake 30 minutes until golden and firm. Cool completely in pan before cutting

Because those who cook don’t always have success, I thought I’d share with you my attempt at a Ginger Fluff that didn’t. (That is: it didn’t fluff - well it’s fluffiness sank as soon as I took it out of the oven). Tasted OK with LOTS of cream, tho.
