Pesto 5 ways

Don’t you just LERV pesto? Well, here’s a treat for you: Pesto in five versions! 

Pesto 5 ways

Great with chicken, steak, pasta, risotto or on toast. Blend, chop finely or use a moartar and pestle.

1. Basil 

1/2 cup of toasted pine nuts

2 tbspn fresh lemon juice

a small garlic clove

2 cups of basil leaves

1/4 cup olive oil

1/4 cup parmesan cheese

salt and pepper

2. Mint

2 cups mint leaes

1/4 cup cashews or almonds

1 garlic clove

4 tbspn olive oil

2 tbspn lemon juice

1/4 cup parmesan cheese

zest of 1/3 lemon

salt and pepper to taste

3. Rocket

4 cups rocket

1 cup toasted walnuts

1/3  cup parmesan cheese

1/4 cup olive oil

1/2 large lemon zested and juiced

2 cloves garlic

Cold water to thin out - if needed

Salt and pepper to taste

4. Spinach

3 cups spinach

1 cup basil

3 cloves garlic

1/2 cup walnuts

1/2 tspn salt

1/2 cup olive oil

2 tbspn lemon juice

2 tbspn parmesan cheese

black cracked pepper to taste

5. Coriander

2 cups coriander

2 clobes garlic

1/4 cup toasted pine nuts

1/2 cup olive oil

1/2 a lemon, juiced

1/2 tspn salt

1/4 tspn pepper

1/4 cup of parmesan cheese
