Souvlaki Cups

An easy mid week dinner.
600g lamb mince
1 cup of fresh breadcrumbs
1 garlic clove, crushed
1 egg lightly beaten
2 tablespoons oregano
100g feta cheese crumbled.
Mix all ingredients together well
Roll into small balls
Add small amount of oil to a frypan and heat.
Add meatballs, browning all over.
Place in a moderate oven to cook through.
Add to fresh crisp lettuce cups (iceburg or cos lettuce)
Add sliced tomato, sliced cucumber, sliced red onion.
Top with tzatziki and squeeze of lime or lemon. Enjoy !
