Spinach and Feta Rolls

Here’s a back-to-school, healthy lunch idea; delicious served cold in the school lunch box, for a healthy alternative to the lunch box sandwich and they also freeze well.

Ingredients 

500g spinach cooked and drained well

200g crumbled feta

1/4 cup finely chopped dill or parsley

3  finely chopped spring onions

1  cup fresh breadcrumbs

Salt and pepper

2  sheets of puff pastry

1 egg lightly beaten.

Method

Preheat oven to 200Љc

Place spinach, feta, dill, spring onions, breadcrumbs, salt and pepper in a bowl and mix well to combine.

Divide mixture into four portions and roll into sausage shapes.

Place one roll down the centre of half sheet of pastry, brush edge with beaten egg and roll up to enclose. Brush tops with egg and sprinkle, sesame or fennel seeds if you have them.

Cut into small rolls and bake for 25 minutes or until pastry is golden.
